The Goods
1/4 c tahini
1/4 c olive oil
2 - 4 tsp apple cider vinegar (less for dressing consistency, more for thicker dip -- be careful*)
1-2 tsp spicy mustard (or spices like chili powder & cayenne, according to taste)
pinch of salt & pepper
Meg's Method
In a bowl, add tahini, olive oil, salt & pepper; mix until well combined.
Squeeze in prepared spicy mustard (or sprinkle in your own spices) & add 2 tsp apple cider vinegar; stir & check consistency.
Depending on what consistency you're going for, you may want to add a splash more vinegar.
*Note: too much vinegar will make the tahini curdle.
