How to make the BEST Sweet Potato (or Squash) Fries
I LOVE BUTTERNUT SQUASH FRIES. Seriously. Amazing.
But sweet potatoes work too. ;)
Cut starchy vegetable into roughly even-sized pieces.
Cover with water and let soak – anywhere from 5 minutes to overnight, depending on your needs.
Drain and rinse thoroughly.
Pat dry with clean towel.
Sprinkle with sea or rock salt and bake dry at 365 for ~30 minutes. (oil and water don’t mix)
Once chips are dry-ish (but no where near burnt), turn oven down to 350 and add coconut oil – or one of your favourite heat-stable fats – to fries and mix gently to coat evenly.
Bake for another 5-15 minutes, depending on preference of crispiness.
